Gluten Free | Nut Free
Makes: 2 chicken breasts (approx. 30 chicken nuggets)
Ingredients:
2 chicken breasts, trimmed and diced into 1 inch even sized cubes
Egg Wash Ingredients:
2 eggs
2 tablespoons milk of your choice
Crumb Ingredients:
2 cups Made Without Breadcrumbs
2 tablespoons garlic powder
2 tablespoons smoked paprika
Pinch of sea salt and cracked black pepper
To Serve:
Your favourite sauce
Extra sea salt
Method:
Preheat an oven to 200 degrees fan bake and line a large baking tray with a wire rack.
Whisk the egg wash ingredients together in a medium-sized dinner bowl and set aside.
Combine the crumb ingredients in a large mixing bowl and sprinkle onto a large dinner plate.
Working one by one dip the nuggets into the egg wash, allow the excess to drip off and cover in the Breadcrumb mixture to coat the nugget completely.
Transfer the nugget to the wire rack.
Repeat this process.
Spray the nuggets with light olive oil and bake in the oven for 10 minutes.
Turn the nuggets over, spray with olive oil and bake for another 10 minutes or until the chicken is cooked through and opaque white in colour.
