Ingredients:
2 cups pearl cous cous, cooked as per packet instructions
1 large zucchini, sliced into thin discs and roasted or pan fried
A handful of cherry tomatoes, halved
3/4 cup canned chickpeas, drained and rinsed
1-2 pieces Made Without Buckwheat Lebanese Breads cut into small squares and air fried on 180 degrees until crispy
To serve:
A drizzle of good quality olive oil
Handful of freshly chopped parsley leaves
Handful fresh mint leaves
Lemons, sliced into wedges
